Apple bread

Here is a healthy, moist, yummy bread recipe :)!!!



INGREDIENTS


  • Maida or All purpose flour  -  1 cup
  • Whole wheat flour               -   3/4 cup
  • Brown sugar                        -   3/4 cup
  • Baking powder                    -   2 tsp
  • Baking soda                         -  1 tsp
  • Salt                                      -   1/2 tsp
  • Cinnamon  powder              -   1 tsp plus 1/2 tsp for garnish
  • Butter milk                          -   2/3 cup, thick (i churned curd that wasnt sour)
  • Canola oil                            -  1/4 cup
  • Egg ( optional)                    -  1          
  • Vanilla extract                     -   1 tsp
  • Apples                                 - 1 cup grated ( tightly packed cup) plus 1/2 cup chopped apples
  • Flax seed powder                -  1 1/2 tbs 
  • Walnuts                               -  3/4 cup
  • Tutti fruitty or candied fruits (optional)  -  1/4 cup
  • Granulated sugar                -  1- 2 tsp
1. Preheat oven to 350F and grease a 9 x 5 loaf pan.
2. Sieve the flours, baking powder and baking soda thrice.
3. In a medium size bowl whisk together the sieved mix, sugar, salt and cinnamon.
4. In another bowl whisk butter milk, oil, vanilla extract and egg (if using).
5. Pour the wet ( oil mix) into the dry (flour mix).
6. Add grated apples, chopped apples, flax seeds and half of the chopped walnuts.
7. Fold to incorporate thoroughly.
8. Pour into the prepared pan and top it with walnuts. candied fruits, sugar and cinnamon.

9.Bake for 50 minutes or until skewer inserted comes out clean.
10. Cool for 10 minutes. Loosen the edges, invert and tap firmly.
11. Slice the bread after its completely cool.
12. Toast the bread before serving.


Note
* this bread tastes equally good without egg but make sure you add 1/2 tsp more of the baking powder and increase the grated apple to1 1/4 cup.
*Like any bread you will get a slight crispy crust
*Since I use convection microwave it took me 60 minutes so check yours before you take out.
