For the sweet tooth - kesari

I love sweets so thought my first post should be some simple yummy sweet. The first thing that came to my mind was kesari.
So here is the recipe....

Ingredients
Rava/sooji              - 1 cup
sugar                     - 11/2 cups
water                     - 2 cups
ghee                      - 1/3 cup
cashew nut            - 5
cardamom powder
saffron colour (optional)
camphor food grade (optional)

  1. In a kadai add 2 teaspoons ghee, add the chopped nuts and fry till golden brown . Keep aside.
  2. Add 1 teaspoon ghee and roast the sooji . Keep aside.
  3. Add 2 cups of water in the same kadai, bring it to boil and add the sugar.
  4. Once the sugar dissolves add the sooji
  5. Add a pinch of saffron colour.
  6. Once its starts getting thick add ghee (1/3 cup) and keep stirring till it leaves the sides. And then remove from flame.
  7. Add the cashew , cardamom powder and if you like a pinch of food grade camphor (pachai kalpooram). Its ready :)

p.s - more fat more taste lol ;) so be liberal with ghee.
       saffron colour and camphor are optional
       roast the sooji well till it is light brown ie a shade dark just before you make kesari.
